Kayla Itsines makes best salad ever using supermarket roast chicken

Australia’s highest-paid fitness influencer Kayla Itsines has revealed how she made the ‘best salad ever’ using pre-cooked supermarket roast chicken.

The 30-year-old fitness queen, from Adelaide, said she created her ‘new favourite lunch’ that ‘took no time at all to make’ after she quickly tossed together shredded chicken, a handful of fresh vegetables and a DIY salad dressing.

‘For my new favourite salad, what I’ll do is grab a roast chicken from my supermarket and shred it all up. The salad base is a mixture of chopped up fresh tomatoes, capsicum, cucumber, red onion, brown rice, and basil,’ she wrote on Instagram.

‘I’ll then top the salad with the shredded chicken, some burrata (the most delicious creamy cheese), olive oil, salt, oregano and balsamic glaze.

The founder of SWEAT said you could easily swap the chicken out for any leftover protein you have from your previous meals.

The mum-of-one explained why lunches don’t have to be ‘super complicated’ or ‘fancy to make them delicious’.

‘I normally go for something very simple like a Mediterranean salad, with tuna, brown rice (or pasta), and I would be very happy to eat that every day,’ she said.

‘Having quick and easy meals means that it’s more convenient for you – it’s easier to reach for something healthy if it’s super simple to prepare.

‘Some people find that the best way for them is to meal prep for the week ahead, or have ingredients cut up and ready in the fridge to use.’

Her lunch comes just weeks after she shared her ‘non-traditional’ breakfast.

She said she usually makes two pieces of toast first thing in the morning, but rather than top them with butter, avocado or eggs, she spreads the Greek dip taramasalata on the toast.

Kayla then finishes her breakfast dish with some kalamata olives, tomatoes with basil, olive oil, salt, oregano, anchovies and cabana meat.

‘I shared my breakfast the other day on my Instagram story and funmp3players had so many questions about my very non-traditional breakfast,’ she wrote.

To clear it up for everyone, this is exactly what this delicious plate of food is made of!

‘I have two pieces of toast with olive oil, tomatoes with basil (salt and oregano) taramasalata (Greek dip) and kalamata olives.

‘I also added some cooked pieces of cabana to this. And then, I have to have my anchovies! Anchovies might be a bit of a different addition to breakfast time, but I love them!’

Finally, Kayla said she always has a Greek coffee to ‘start’ her day.

A Greek coffee is a strong brew of coffee, which is served with foam on the top (kaimaki) and grounds at the bottom of the cup.

It is a style of coffee that is prepared using very finely ground beans without any filtering.

For the fitness star, the wholegrain toast gives her slow-release carbohydrates, while the anchovies are loaded with protein and the olive oil ensures there are some healthy fats in her morning meal.
